Coffee Beans Processing

A while ago I posted pictures of the fragrant white blossoms on our coffee plants. Over the past several weeks I have been harvesting the ripe beans. I stored them in the refrigerator until it was time for processing. I soaked them in water to soften the fruit and make it possible to squeeze the bean from the pulpy shell. Next they dried in the sun for two days and then I roasted the beans in the oven. Next time I will probably try roasting on the stove top. It was impossible to get an even roast in the oven. I'm not a coffee connoisseur and pay more attention to how the coffee makes me feel rather than how it tastes and these beans passed with flying colors.
